Fábio Rodrigues Abreu, student of the Master's Degree in Gastronomic Sciences, is part of the team that won the award “Born from Knowledge” in the 2020 edition of the Ecotrophelia Portugal Awards.
The award, promoted by ANI - National Innovation Agency in partnership with PortugalFoods, distinguishes the best project born from scientific and technological knowledge.
The team intended to take advantage of the tomatoes that the industry wastes to create a new product that “results from a fusion of foods and flavors from the Mediterranean diet, with a delicate balance between acidity and salty and is of national origin. Nutritionally it is low in calories, containing vitamins and micronutrients that contribute to a balanced and varied diet. It also contains probiotics and symbiotics resulting from fermentation that enhance health benefits ”, according to the statement.
The team also includes researchers from the Higher Institute of Agronomy, University of Lisbon and is already seeking strategic partners to bring Tomatable to the market.
The “Born from Knowledge” award is promoted within the scope of SIAC - Knowledge Transfer Initiative, co-financed by COMPETE 2020, through Portugal 2020 and the European Regional Development Fund.
